A simple one-pot dish for a weekday dinner. It's very easy to make with only a few ingredients and is a healthy meal.

Slow Cooked Rice with Basa Fillet

Ingredients:
  • 2 cups medium-grain rice
  • 400g basa fillet, cut
  • 1 onion, finely chopped
  • 500ml chicken stock
  • 1/2 cup green peas
  • 3 cloves garlic, crushed
  • Salt to taste
  • Pepper to taste
  • Oil
Preparation:
  • Heat slow cooker on medium heat. Add oil and fry the onions and garlic for a minute.
  • Add rice and fry for a minute.
  • Add chicken stock and cover. Cook until the rice is soft. It takes about 15-20 minutes. Check regularly. You may need to add some extra water.
  • When rice is done, add green peas, basa fillet, salt and pepper and combine together with rice. Cover and cook for 4-5 minutes.
